I might be able to answer some of these for you haha. I am not staff here but I do play 2 Were's (Bubbles or M&M can leap in if I got anything wrong lol):
1)In a current thread of mine, Frost (a Werehorse) inflicted a bite wound upon Calliel, a human played by Jailheart (we obviously agreed to this prior I don't recommend you go around biting humans without talking to the player lol) anyway when you are bitten by a Were-creature you turn into the SAME species as the creature that bit you. Calliel has just recently changed into a horse. If a Leopard were to bite you, you would become a leopard, if a cow attacked you, you would become a cow. You become the same animal as the creature that bit you, the only sort of choice you have there for instance is the colouration/markings your animal has. For example Frost is a very large white draft-type horse, Calliel is a lighter, black horse with a bit f white on her face, so she is a different colour but still a horse. You will always be the same animal as the one that bit you.

In short, even in their animal form, they still have complete control of themselves. For example, when Frost is a horse he does not just go around eating peoples lawns and spooking at plastic bags. He is entirely himself, has all his memories, emotions, ideas just as he does in his human form, he is simply just now in horse form lol. Saying that though, Frost is prone to the occasional slip up, for example, even in human form he will seek out sugar cubes, he loves them, because he is half an animal deep down. He is also a vegetarian. His animal instincts still afflict him even in human form and when in animal form he likes to have his neck scratched (though he will never admit it) so he is prone to being a bit horsey either way lol. My other Were, Tobias, is more animal then he is man. Even in human form he will play with a piece of string or sit in a box because cats like boxes, in animal form he and his pack actively hunt prey, kill and eat it like animals do because in that form there animal instincts are more heightened and they are capable of that then, when they are in human form they sit down to a meal. It is really up to you how much 'animal' they show in there human form and how 'human' they are in their animal form. Some Were's like Nadya or Tetradore even Frost for the most part , you would have no idea they were even a Were. How you play it is up to you, some Were's find there animal instincts harder to control then others. It's really how you want to play it.
