Well, he would have to be able to verify that she was supernatural in some way. I've sort of had him operate as a hit man, that there's someone else out there who assigns him people to kill. So he waits for his assignments. Maybe she's one of them?

Or he could just see her one night and be drunk, and decide to try to attack her anyway, which would be sort of out of character for him. But still doable!
